St Valentine’s Chocolate Biscuits Recipe
I know, I know, the 14th of February has just passed, but there are two good reasons to bake these delicious St Valentines chocolate biscuits for your sweetheart: the first is that, everyday it’s St Valentine’s day (this is my favorite line when people ask me why me and my boyfriend don’t do anything special on this day, but I’ll give you permission to use it for free), and the second reason is that you will need heart-shaped biscuit molds and – in the likely case that you don’t have them - after St Valentines they will be much cheaper. Anyway, enough introduction, let’s go with the ingredients:
180gr flour
125gr butter, softened
80gr icing sugar
1 egg
1 tsp corn starch
4 tbsp cocoa powder
100gr dark chocolate
In a bowl, work the butter with the sugar until you get a smooth cream then add the egg. Mix until blended then add the corn starch. In a pan, melt the dark chocolate on a very low heat then add it to the bowl together with the cocoa powder. Bring all the ingredients together, then form a ball and wrap it in cling film and leave it in the fridge for about twenty minutes. Stretch it with a rolling pin and use you magic heart-shaped molds.
Preheat the oven at 180ºC. Line a baking tray with oven paper and lay the St Valentine’s biscuits, 1 inch from one another. Bake them for 10 minutes (or until the edges are golden), that’s all they need. Let them cool to room temperature then transfer to a serving dish sprinkle with icing sugar.
